Pizza is a favorite dish across America. However, many people do not have time to sit and enjoy a whole pie. The unique crust of a slice of NY pizza sets it apart. You can easily fold your slice, making it perfect for eating on the move. Here are some key benefits:
Pizza first appeared in Italy during the 1700s and was baked in wood-fired ovens. When Italian immigrants arrived in America, they used coal because it was more common. Coal-fired ovens produced a crispier, drier crust, which became the hallmark of NY style pizza. Eating pizza fresh from these ovens was essential, as the crust could turn tough when cold. This made selling slices difficult until gas ovens arrived.
Frank Mastro, an Italian immigrant, invented a way to use gas instead of coal. Gas ovens baked pizza more evenly at a steady temperature. The result was a drier crust that stayed tasty even after reheating. Pizzerias could now sell pizza by the slice and still deliver great flavor.
Neapolitan and NY style pizzas differ in more ways than just the crust. The switch from wood to gas ovens changed many things. For example, New York pizzerias used canned tomatoes. Unlike fresh tomatoes, canned ones have more acidity. To balance this, chefs added more seasoning to the sauce.
Another big difference is the cheese. Neapolitan pizza uses fresh mozzarella, which is high in water. A slice of NY style pizza uses low-moisture cheese. This keeps the crust from getting soggy during longer baking times. Low-moisture cheese melts perfectly, creating a classic NY slice.
